Turkish Cuisine / Cooking in Turkey

Itinerary

DAYS 1 & 2

After international arrival, you will spend the first two days touring the historic districts of Istanbul, and getting acquainted with its active food scene.  Under the auspices of our experienced guides, sample the broad range of traditional cuisines available in this cultural capital.  From Ottoman specialties in the Sultan’s kitchen, to simple foods - including fresh simit, fish sandwiches, and kebabs - you will quickly find new favorites.  And you’ll certainly want to leave room for sweets.

DAY 3

After flying one hour to Antalya, you will settle into your hotel in the beautiful Old City overlooking the harbor. After a traditional Mediterranean breakfast, you will participate in your first cooking lesson.  Today’s theme is olive oil dishes.  After enjoying these dishes with freshly baked breads and a wine and cheese accompaniment, you’ll have a free afternoon to explore along the cobble streets.   Dinner and live music will cap the day.

DAY 4

For today’s inspiration, we leave the city after breakfast and go out to explore fertile fields and brimming greenhouses in a nearby village. Here you’ll gain appreciation for the real source of Turkish cuisine: its village farms, gardens and orchards.  After a tea time with fresh bread and honey from the local bee boxes, you will investigate the essentials of tomato, herb, and citrus farming.  Gather your own assortment of greens, herbs, and vegetables to use in preparing today’s meal.  Local ladies will roll out large flatbreads and fill them with various ingredients for our lunch break.  The afternoon will continue with cooking and relaxing according to this region’s traditional flow of work and rest.  After enjoying a dinner meal around an elevated silver tray table, and a typical send off snack of local fruits and homemade popcorn, you’ll return for a good night’s rest back in the city.

DAY 5

A morning flight to Izmir after breakfast puts you very near the region where olive trees and both small and large scale oil production are waiting for you to explore.  In season, you will have occasion to gather olives, try home curing and various oil pressing methods, and certainly taste all manner of olives at the open air bazaar.  Choose your favorites, along with a variety of cheeses and fresh produce.  We’ll have an evening meal out in the quaint town of Selcuk before retiring at a boutique hotel.

DAY 6

Anyone desiring to rise early may join a tour of the local stone oven to bring back the freshest loaves of bread and pastries for breakfast.  We’ll continue on today to tour the remarkably excavated city of Ephesus and the most notable sites of the Aegean region.

DAY 7

We escort you to the airport to connect via Istanbul to your flight home.  However, we recommend you extend your stay and continue on to Cappadocia for a last few days.  Besides the many experiences and flavors you take home with you, we will present you with a complimentary full color cookbook as you depart.
